The Cotswolds is a stretch of countryside in west-central England known for its farms, limestone villages, and long agricultural traditions. It’s also home to one of England’s most thoughtful modern distilleries.

Cotswolds Distillery was founded in 2014 by Daniel Szor with a clear goal: build a small distillery focused on flavor, using quality ingredients, proper copper stills, and a hands-on approach to production. Gin quickly became one of the distillery’s calling cards, but it didn’t happen overnight. The team worked through dozens of trial recipes before landing on the balance that defines Cotswolds Dry Gin today.

At its core, the gin follows the classic structure that defines great London Dry styles—juniper, coriander seed, and angelica root. From there, the distillery adds a thoughtful range of botanicals that bring freshness and detail. Lavender grown in the nearby village of Snowshill contributes a delicate floral note, while pink grapefruit and lime peel add bright citrus lift. Cardamom, bay leaf, and black pepper provide a subtle layer of spice.

Everything is distilled in small copper pot stills using a traditional one-shot method, meaning the gin is created in a single distillation rather than produced as a concentrate and diluted later. That slower approach preserves the aromatic oils from the botanicals and gives the finished spirit real depth. Bottled at 46% ABV, Cotswolds Dry Gin has the structure for a proper Martini, the brightness for a classic gin and tonic, and the balance that bartenders look for when building cocktails.
