Readers may know that I have been hugely impressed in the last few years with what Philippe Pascal, and his technical director Guillaume Marko, have achieved at the Domaine du Cellier aux Moines in the last few years. It was a bold move in the first place to buy this ancient property and then to ripe out all the old vines because of their poor clonal material and replace with pinot fin.
The Cellier aux Moines enjoys a most beautiful setting on a south-facing slope overlooking Givry. The domaine was founded by the Cistercians as far back as 1130. Beautiful buildings, including the monastic cellar, remain to dominate the slope.
Further vineyards have been added along the way, including some Côte de Beaune 1ers crus in 2012 (Chassagne Chaumées, Puligny Pucelles, Santenay Beauregard) The domaine now covers 10.50ha in all, with the arrival of a second slice of Montagny 1er Cru in 2020.
