Heavensake is the brainchild of world-renowned Chef de Caves, Regis Camus, from Maison Rare Champagne. Regis was the first to bring blending to sake with the intention of creating complex yet perfectly balanced compositions through the art of Assemblage. When Assemblage is applied to sake, the results are more round, balanced sake, similar to the carefully composed wines of France.
This sake is made using Yamada Nishiki rice milled down to 23-39%, which allows the aromas of jasmine, lilies and iris to charge out of the glass. When you sip it, the flavor of early summer pear mixed with wild raspberries, and Muscat grapes. This sake is best enjoyed alongside Angel Hair Pasta with Lobster topped with a healthy portion of Caviar. Enjoy chilled in a wine glass.
