Cuvée 741 Dégorgement Tardif is part of the house’s 700-series, where each release reflects a specific base vintage and growing season. This bottling leans on Chardonnay from Avize and Pinot Noir from Aÿ and Dizy, with no dosage and an extended 94 months on the lees before late disgorgement. Production is extremely limited, with just over 14,000 bottles and a small number of magnums.
The wine shows both depth and precision. Ripe orchard fruit, citrus peel, and a touch of brioche come through on the nose, while the palate is structured, mineral, and driven by bright acidity. There’s weight here, but it stays focused. A strong match for shellfish, lobster, or richer dishes like foie gras.
