Produced in Neive in the heart of Piedmont’s Langhe hills, this unaged grappa is distilled from fresh Nebbiolo-based pomace in tiny direct-fire copper alembic stills, preserving an incredible amount of aromatic detail and texture.
Unlike the lightly rested Paglierina, Bianca remains completely clear and unaged, allowing the raw character of the grape and distillation to take center stage. The nose is intensely expressive with aromas of fresh grape skin, wild herbs, white flowers, citrus zest, fennel, and crushed stone. On the palate, it is energetic and dry with remarkable precision, carrying notes of pear skin, alpine botanicals, pepper, and delicate earthy tones. Despite its intensity, there’s a softness and persistence that reflects the care behind the distillation.
